Hereβs a delicious recipe from Kai; a moist, rich cake filled with creamy mascarpone and apples. Itβs perfect for dessert or to enjoy with your coffee. Try using tart apples like Granny Smith or sweet, crisp ones like Honeycrisp.
Ingredients
- 2 apples (peeled, cored, and thinly sliced)
- 250g (1 cup) mascarpone cheese
- 150g (ΒΎ cup) granulated sugar
- 3 large eggs
- 150g (1ΒΌ cups) all-purpose flour
- 1 tsp baking powder
- Β½ tsp baking soda
- Β½ tsp cinnamon (optional)
- ΒΌ tsp salt
- Zest of 1 lemon
- 1 tsp vanilla extract
- 55g melted butter

- Powdered sugar (for dusting)
- Extra apple slices (optional, for decoration)
Steps
- Preheat oven to 350Β°F (175Β°C) . Grease and flour a 10-inch (25 cm) springform pan.
- Prepare apples: Thinly slice apples and toss with a bit of lemon juice and cinnamon if desired. Set aside.
- Mix wet ingredients: In a large bowl, beat together the mascarpone, sugar, eggs, vanilla, lemon zest, and butter until smooth.
- Mix dry ingredients: In a separate bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
- Combine: Gradually mix dry ingredients into the wet mixture until just combined (do not overmix).
- Fold in apples: Gently fold in most apple slices, saving a few for topping.
- Bake: Pour batter into the pan. Arrange reserved apple slices on top. Bake for 45β55 minutes or until a toothpick inserted in the center comes out clean.
Serving
Let cool for 10β15 minutes in the pan, then transfer to a wire rack. Dust with powdered sugar before serving. For a special touch, drizzle with honey or serve with a dollop of whipped mascarpone.
