Derived from other lentil recipes, French lentils offer a unique texture and flavor. They are an excellent source of protein and fiber. This recipe is a great way to use up leftover vegetables (we use just carrots here) and can be prepared in advance and reheated.
Ingredients
- 1 pint lentils, sorted and washed
- 2 pints water
- 3 tablespoons olive oil
- 1 slice of bacon, diced
- Β½ onion, diced
- 1 carrot, diced
- 1 tablespoon red pepper paste
Spice Mix
- ΒΌ teaspoon cumin
- ΒΌ teaspoon ancho chili
- ΒΌ teaspoon black pepper
- 3 teaspoons salt
Steps
- Brown the bacon in medium-heated oil for 1 minute.
- SautΓ© the onions and carrot with the browned bacon for 2 minutes.
- Add the red pepper paste, lentils, and spice mix. Gently stir for 45 seconds.
- Add water and bring to a boil.
- Lower the heat to a simmer.
- Set a timer for 35 minutes. Check for doneness and adjust with 3-minute intervals to achieve the desired texture. (The fewer times you open the lid, the better the taste.)
Serving
Serve two ladles of lentils with two tablespoons of wild rice and a side of salad.
