While experimenting with cooking leeks, we were pleasantly surprised by the outcome. This dish quickly became a favourite, compelling me to write down the recipe for future reference. It makes a savoury, delightful side for turkey, chicken, or even beef.
Ingredients
- 1 leek, sliced into 2 mm rounds
- 1 tablespoon butter
- 1 teaspoon red pepper paste
- 1 bowl of pre-boiled beans, such as navy beans
Spice Mix
- ½ teaspoon salt
Steps
- Melt butter gently in a saucepan over medium heat for 1 minute.
- Sauté leeks until tender, about 3 minutes.
- Fold in the red pepper paste.
- Add the spice mix.
- Mix in the beans and stir well until warm through.
- Let it rest for 5 minutes before serving.
Serving
Serve with sliced roast turkey or chicken, accompanied by a simple green salad.
