Tangy and light, this simple no-fuss
salad requires no complicated dressing. Enjoy it as a refreshing lunch
or a delightful dinner side. Despite its name, it can be made year-round
whenever you’re in the mood for it. We first discovered the use of
grapefruit in a salad during the summer, and it quickly became a
favourite.
Ingredients
- 1 head of lettuce, roughly chopped (Romaine hearts or a mix of green
and red leaf lettuce)
- 1 cup grape tomatoes, quartered
- ¼ cup diced red onion
- 1 grapefruit, peeled and segmented, broken into small pieces
- 1 cup crumbled goat cheese (or substitute with feta)
- 1 tablespoon extra virgin olive oil
Spice Mix
- ¼ teaspoon black pepper
- ½ teaspoon salt
Steps
- Gently mix the lettuce, tomatoes, and red onion in a large
bowl.
- Fold in the grapefruit pieces.
- Drizzle with extra virgin olive oil and sprinkle with the spice mix.
Toss lightly.
- Garnish with crumbled cheese and serve.
